Muffins de maçã e gengibre da Colher de Mãe - Colher de Mãe's Apple and ginger muffins


Tenho aqui deixado poucas receitas de bolos, é verdade, e para aqueles que me seguem por causa das receitas é de facto injusto. Mas, como já devem ter reparado o Colher de Mãe tem vindo a mudar ao longo do tempo. Começou por ser um blog de receitas, mas agora já é muito mais do que isso. Eu própria tenho vindo a mudar muito em relação a muitos temas e a culinária é sem dúvida um deles. Cá por casa andamos a descobrir as maravilhas da alimentação saudável, sem carne, com muito mais vegetais crus e frutas e mais próxima do natural. E claro, os bolos também passaram por essa transformação.
Tenho aprendido muito com uma amiga, a S, que me tem ensinado a substituir alguns ingredientes usados na culinária tradicional, por outros muito mais saudáveis e igualmente saborosos. Sim, porque para mim esse é o ponto crucial. Não quero que a alimentação seja um sacrifício, quero sim , que seja um prazer saudável. Com crianças em casa é como ter a censura à porta todos os dias. Se as receitas passarem pela aprovação dos mais pequenos, então estou safa!! :)
Hoje, para começar esta nova era de receitas da Colher de Mãe vou deixar-vos uns muffins fantásticos que os mais pequenos cá de casa adoram!!! Espero que gostem e que adiram a estas receitas mais saudáveis.

I haven't been writing much about recipes lately that's true, and that is also not fair for those who like my blog because of the cake recipes. But, as you may have noticed, Colher de Mãe, has been suffering some changes lately. In the begining it was a cake recipe blog, but now, it is so much more than just that. I, myself have been through so many changes lately. I changed my way of looking into so many things, and food is definitely one of them. My family is discovering the wonders of healthy eating, meat free, with lots of raw vegetables and fruits and closer to what's natural. And of course, cakes have gone through this transformation as well.
I have been learning so much with my friend S, she has taught me how to replace some of the ingredients usually used in traditional baking, for other much healthier and equally tasty. Yes, tasty is the crucial point, because I don't want healthy food to be a sacrifice. I want it to be a healthy pleasure. With small kids at home is like going through the censors every day and every minute. I only get through the test if kids approve what I bake! :)
Today, to start with this new age of baking, I will give you this wonderful muffins recipe that my kids just love. Hope you like them and hope you join me on these healthy recipes.

Ingredientes para 12 muffins:
1/2 copo de puré de maçã natural (1 copo = 240ml)
1 copo de açúcar mascavado
1/4 copo de óleo de côco
1 iogurte natural
1 copo farinha de espelta
1/2 copo farinha de alfarroba
1 colher de chá de bicarbonato de sódio
1 pitada de gengibre fresco
1 maçã cortada em pedaços pequenos

Juntar o açúcar mascavado (gosto mais de usar geleia de milho ou trigo ou xarope de agave, mas por vezes não encontro à venda) com o sumo de maçã e bater. Adicionar o óleo de côco derretido e juntar o iogurte natural batendo sempre. Adicionar as farinhas peneiradas, o bicarbonato de sódio, o gengibre e finalmente a maçã. Bater muito bem até fazer uma massa cremosa. Deitar dentro de formas de queques forradas com papelinhos e levar ao forno pré aquecido a 200ºC cerca de 25 minutos. Bom apetite!!

Ingredients for 12 muffins:
1/2 cup fresh apple sauce (1 cup = 240ml)
1 cup dark brown sugar (mascavo sugar)
1/4 cup coconut oil
1 yogurt
1 cup spelta flour
1/2 cup carob flour
1 teaspoon baking soda
1 pinch fresh ginger
1 apple cut into small pieces

In a bowl, beat the sugar (I prefer to use agave syrup or jelly wheat, or even corn jelly, but sometimes it is difficult to find in a near shop) with the fresh apple juice. Add the melted coconut oil and the yogurt and continue beating. Sift the two flours together and add them to the previous mixture as well as the baking soda, fresh ginger and the apple cut into small pieces. Beat everything together until is fluffy. Spoon batter into prepared muffin cups and bake them in a 200ºC preheated oven for about 25 minutes. Have a nice muffin!!
